By the mid-nineteenth century, the term "icebox" had entered the American language, but ice was still only beginning to affect the diet of ordinary citizens in the United States. The ice trade grew with the growth of cities. Ice was used in hotels, taverns(酒馆), and hospitals, and by some forward-looking city dealers in fresh meat, fresh fish, and butter. After the Civil War (1861-1865), as ice was used to refrigerate freight cars, it also came into household use. Even before 1880, half of the ice sold in New York, Philadelphia, and Baltimore, and one-third of that sold in Boston and Chicago, went to families for their own use. This had become possible because a new household convenience, the icebox, a precursor (前身) of the modern fridge, had been invented.
  Making an efficient icebox as not as easy as we might now suppose. In the early nineteenth century, the knowledge of the physics of heat, which was essential to a science of refrigeration, was rudimentary(未发展的). The commonsense notion that the best icebox was one that prevented the ice from melting was of course mistaken, for it was the melting of the ice that performed the cooling. Nevertheless, early efforts to economize ice included wrapping up the ice in blankets, which kept the ice from doing its job. Not until near the end of the nineteenth century did inventors achieve the delicate balance of insulation(绝缘) and circulation needed for an efficient icebox.
  But as early as 1803, and ingenious Maryland farmer, Thomas Moore, had been on the right track. He owned a farm about twenty miles outside the city of Washington, for which the village of Georgetown was the market center. When he used an icebox of his own design to transport his butter to market, he found that customers would pass up the rapidly melting stuff in the tubs of his competitors to pay a premium price(高价) for his butter, still fresh and hard in neat, one-pound bricks. One advantage of his icebox, Moore explained, was that farmers would no longer have to travel to market at night in order to keep their produce cool.

Money spent on advertising is money spent as well as any I know of. It serves directly to bring about a rapid sale of goods at reasonable prices, so setting up a firm home market and making it possible to provide for export (出口) at good prices. By drawing attention to new ideas it helps greatly to raise standards of living. By helping to increase demand it causes an increased need for labour, and is therefore a nice way to fight unemployment. It lowers the costs of many services: without advertisements your daily newspaper would cost four times as much, the price of your television program would need to be doubled, and travel by bus or subway would cost more.

  And perhaps most important of all, advertising provides a promise of reasonable value in the products and services you buy. Besides the fact that twenty-seven Acts of Parliament(国会)govern the terms of advertising, no regular advertiser dare produce anything that fails to live up to the promise of his advertisements. He might fool some people for a little while through misleading advertising. He will not do so for long, for the public has the good sense not to buy the poor goods more than once. If you see product frequently advertised, it is the proof I know that the product does what is promised for it, and that it has good value.

  Advertising does more for the good of the public than any other force I can think of.

  There is one more point I feel I ought to touch on. Recently I heard a well-known television person declared that he was against advertising because it persuades rather than informs. He was telling us the real difference. Of course advertising tries to persuade.

  If its message were nothing but information, that would be difficult to get more people to buy, for even the choice of the colour of a shirt is a bit persuasive (有说服力的)--advertising would be so boring that no one would pay any attention. But perhaps that is what the well-known television person wants.

Sustainable development is applied to just about everything from energy to clean water and economic growth, and as a result it has become difficult to question either the basic assumptions behind it or the way the concept is put to use. This is especially true in agriculture, where sustainable development is often taken as the measure of progress without a proper appreciation of historical and cultural perspectives.

  To start with, it is important to remember that the nature of agriculture has changed markedly throughout history, and will continue to do so. Medieval agriculture in northern Europe fed, clothed and sheltered a mainly rural society with a much lower population density than it is today. It had minimal effect on biodiversity, and any pollution it caused was typically localized. In terms of energy use and the nutrients captured in the product it was relatively inefficient.

  Contrast this with farming since the start of the industrial revolution. Competition from overseas led farmers to specialize and increase yields. Throughout this period food became cheaper, safer and more reliable. However, these changes have also led to habitat loss and to reducing biodiversity.

  All this means that agriculture in the 21st century will have to be very different from how it was in the 20th. This will require thorough thinking. For example, we need to move away from the idea that traditional practices are certainly more sustainable than new ones. We also need to abandon the notion that agriculture can be “zero impact”. The key will be to abandon the rather simple and static(稳定的)measures of sustainability, which centre on the need to maintain production without increasing damage. Instead we need a more dynamic interpretation, one that looks at the pros and cons of all the various way land is used. There are many different ways to measure agricultural performance besides food yield: energy use, environmental costs, water purity, carbon footprint and biodiversity. It is clear, for example, that the carbon of transporting tomatoes from Spain to the UK is less than that of producing them in the UK with additional heating and lighting. But we do not know whether lower carbon footprints will always be better for biodiversity.
